Zumba for Cancer Survivors with Ingrid Macher

Healthy Holiday Baking with Kyra!

“We assume it’s because we overate, but for a lot of people, that pain and sick feeling may not be about how much you ate but what you ate,” says Kyra Bussanich, two-time winner of The Food Network’s “Cupcake Wars” and author of a just-released recipe book, “Sweet Cravings: 50 Seductive Desserts for a Gluten-Free Lifestyle” (Ten Speed Press; Random House, Inc.) “About 2 million Americans have celiac disease – an auto-immune reaction to gluten, the protein in wheat,” says Bussanich, whose painful symptoms became life-threatening before she was finally diagnosed with the illness. “Most of those people aren’t diagnosed though, because the symptoms look like so many other intestinal ailments.” People with celiac disease must completely avoid gluten, which is also in rye, and barley, to avoid a case of painful and gut-damaging indigestion. But, as Harvard Medical School reported earlier this year, avoiding gluten also appears to help people with less serious digestive issues. “It really does seem to provide some improvement in gastrointestinal problems for a segment of the population,” says Harvard assistant professor Dr. Daniel Leffler. For Bussanich, a chef, there was no choice: One speck of gluten would make her ill. But she refused to give up pastries, cakes and other treats, so she perfected gluten-free varieties. Her award-winning desserts left their flour-based competition in crumbs on “Cupcakes Wars” in 2011 and 2012, and she was a runner-up on the show’s “Cupcake Champion.” Bussanich Tips for whipping up gluten-free baked goods this holiday season: • If you’re following a recipe, don’t substitute the listed flour or starch with another type unless you’re familiar with its properties. There are many different types of gluten-free flours and starches, including millet, sorghum and sweet white rice flour, and potato and tapioca starches. Each has its own idiosyncrasies. For example, millet flour has a slightly nutty flavor and is well-suited for goods with a hearty texture. Sweet white rice flour holds moisture well and is good for recipes that have a slight gumminess to them. Potato starch is light and good for fluffy cakes. • Use eggs and butter at room temperature. Eggs are often used as a binder, the protein that substitutes for the missing gluten. Eggs and butter are both easier to work with when used at room temperature, and room-temperature egg whites whip up fluffier. If you forget to pull the butter out of the refrigerator beforehand, heat it for 7 to 12 seconds in the microwave. Put cold eggs in warm (not hot) water for 30 to 60 seconds. • Don’t overwork batter and dough with xanthan gum in it. Corn-based xanthan gum is...

An Fun Interview with Ingrid Hoffmann!

By Lynn Ponder: I was invited to meet and interview the fabulous Ingrid Hoffmann who has made a name for herself through her passion for food and lovely personality. Ingrid is a beloved TV personality with her own show on The Food Network titled Simply Delicioso and on Univision. Inspired by her fans from the Hispanic and American Market she became a book author launching her second book titled LATIN D’LITE. So let’s get real about Latin food now, Latin food is known for its varied flavors, wide use of spices, root vegetables, exotic fruits, “frituras” and of course, “arroz con pollo”. Ingrid Hoffman talks about her new Latin D’Lite book with a healthier twist and I hope you enjoy as much as I did, plus she recorded a message for all of our amigas and gave us her new book to giveaway WEPA! LYNN: Was your second book writing experience different from the first time around? INGRID: Yes it was because the first book I had no clue what I was doing. But because my team executed it so well and I had such a great editor and publisher it all just worked and everyone loved it. This time was scarier because I knew what I was getting into and I knew I had to surpass the first book, but I do believe we did but we will know by our public. Lynn: Yo no se cocinar, pero what’s that one kitchen item you think every cook should have on hand? Ingrid: A pressure cooker because you can throw anything in it and in 20 minutes be having an amazing meal that you didnt need to necessarily pre-plan. Lynn: Tremendo resuelve! Chica, who is your culinary inspiration? Ingrid: My mother and my father too. My mother is a cordon blue trained chef, so I learned from her since I was a child and I grew up in her business which was a catering company and a restaurant. My father was an amazing cook, actually this book is really the concept of eating of my father. He always told us to eat real food, he was ahead of his time, beacuse back in the day nobody thought like that. He would say “Hija no repitas mas arroz, come mas ensalada, quitale una tajada de pan, come poco pan y toma mas agua”. So this book is very much inspired by that little voice that says “No more rice eat this instead”. Lynn: In this digital area do you use or recommend any apps related to kitchen measurements or ingredients? Ingrid: I don’t really cook with measurements or with recipes,...

Iron Fork #Priceless #Miami Fun Culinary Event Thanks To @Mastercard #MC

What a great idea to combine arts with a culinary experience called Iron Fork. All the action started at the beautiful Adrienne Arsht Center for the performing arts for the sixth annual Iron Fork. Before I continue with my story, required to share that I am a member of the Collective Bias® Social Fabric® Community. This shop has been compensated as part of a social shopper insights study for Collective Bias and their client. Thanks to MasterCard Priceless Miami website, we had access to the VIP package which included 1 hour early entrance with unlimited restaurant sampling from 45+ Miami fine restaurants. Truly a great way to get ahead of the crowds and enjoy sometime to meet the chefs of the restaurants. There is so much more you can do and take advantage of MasterCard special offers! At the entrance we were happy to meet Isaac Pineira from Downtown Miami who was sharing all the great activities this organization is creating for Miami and he also shared that he was following us on Twitter YaY! From this stop we stumbled across MasterCard fantastic suite which had delicacies from Morton’s The Steakhouse and the trendy French restaurant Bâoli, We also met a young lady that was part of a metal type of display sharing tasting of their product: BestIceCreamOfMiami.com The VIP section was inside the main theatre room and it was really pleasant that they featured a piece of an actual show taking place at the performing arts center in this case, “Legally Blonde”. They also had friendly waiters coming by constantly with delicious appetizers as well as several bar stations with alcohol from Bacardi, Wines of Chile and one of my favorite beers Stella Artois. Glad that we had walked to the arts center which meant no need to assign a designated driver, as we could happily walk back home ☺ Some of the other restaurants we got to enjoy included: MPP Brickell, El Chamán, The Local House, Charles Street, Red, Fish Fish, Edge Steak & Bar, Terraza at Shore Club, Sweet Times. We tried to get to as many as possible, but the crowds were getting bigger and bigger, and there is just so much you can eat and drink in two hours lol! You are invited to visit Priceless Miami with exclusive offers for MasterCard cardholders. Dreaming about your spa day, well how about taking advantage of MasterCard special offers during the month of August or if you are shopping at Miami Dolphin Mall you will get a gift when you spend $250 or more. If you did not have a chance to check out my last...
